LeRoy and Lewis give barbecue enthusiasts multiple options to learn their way around the smoker. First, the New School Barbecue, which takes place twice a year – the next session will take place in early 2023 – and includes a full weekend period of teaching and hands-on activities. If you don’t want to wait that long, they’re offering a one-day summer class on August 13 for $600. This is essentially a condensed version of the University of Barbecue, during which entrants will learn how to shear and trim the cheeks of cows, breast meat, and pork; finer points in the casing and smoking sausages; Fire management and how to roll and slice meat. It will also include a guest board, breakfast and lunch, and all conclude with happy hour.

“This is a short, condensed course for the professional, up-and-coming, or serious backyard chef,” says chef and transportation official Evan Leroy. In-person classes attract a diverse crowd. “We had people coming in from all over the country to learn, as well as from down the street. There are lessons that apply on both sides of the spectrum.”

LeRoy and Lewis also offer online classes via Zoom. Next is July 1 and it covers everything you need to know about brisket and sausage. Then there’s the Patreon membership; For $30 per month, backyard enthusiasts have access to over 100 educational videos that they can watch without ever having to leave home. The videos cover topics such as cooking brisket, reducing fat, smashing animals, making treats, and even cleaning the grill pit.

You’re welcome to join this line, but if you’d like to try and recreate some of this delicious magic on your own, sign up for Goldie’s brisket class. Dropping in July 18, attendees will spend the whole day learning about the restaurant’s brisket process, including how to sear and season the meat, how to manage fires and temperature, and how to cook, chop and dish. The chapter ends with a Q&A with the Goldie’s guys. At $1,000, that’s not cheap, but you do get eight hours of expert instruction, plus a Goldie’s bag filled with a hat and T-shirt, Goldie’s sauce, a brisket, and an all-purpose rub.

Given the price and the extensive instructions, the Goldee team says their classes are geared toward professionals or home cooks with a keen eye for barbecue. In addition to the July 18 class, Goldie’s will be hosting other sessions on later dates that focus on meat and other preparations, so stay tuned.

Once a popular food truck and now an actual restaurant serving some of the best barbecue in the state, Panther City has started offering classes during the pandemic. After an enthusiastic response, they’re still going strong, with monthly classes costing $200 and lasting four hours, from 10 a.m. to 2 p.m. In groups of 15 people, attendees learn how to use a smoker effectively, pick wood, trim, label and cook brisket, ribs, and other protein spinners. You’ll get pro tips for choosing a home smoker, and you can ask questions about your specific model for tips on making the most of what you have.

Cattleack’s owner, Todd David, holds a casual Pits & Punch session at 9 a.m. on the first Saturday of every month. You don’t have to register or pay a fee, just come by to join other smoked meat lovers looking to improve their barbecue game. During these Fireside Chats, you can ask questions about everything to do with barbecue, from fuel sources and equipment to achieving the perfect smoke ring. Then stick to eating.
